This meal is quite a special one to me as it it was one of the fish dishes that got me over a life long aversion to fish.
The original meal which did that was Mackeral and pasta (which I shall share with you sometime), but I'd eat that and no other fish. One time I was staying at work and my boss had made this Haddock and Rice and left me some, from the first mouthful I was hooked.
It is incredibly easy to make, the instructions below are for the dairy free version but you can switch the Pure for butter if you like, you can also add cream and eggs for some excitement.
The girls I look after love this dish. Well one does, the other loved it for a bit but went off fish before becoming completely vegetarian (you win some, you lose some!).
